In commercial kitchens — hotels, hospitals, school cafeterias — the fire we meet most often in the field is the deep-fryer fire. Vegetable oil auto-ignites at about 365°C, and applying water at that point is a disaster: the oil-water steam explosion turns the kitchen into an inferno in seconds. NFPA 96 frames the hood, duct, fan, damper and suppression requirements; UL 300 defines the wet-chemical (Class K) agent and saponification performance.
